Three delicious winter soups

We are soup lovers! The warm, the spicy, the creamy, the savoury. We love them all. Here is our top three for this winter. They are vegetable based with a few added ingredients and very easy to make. Soups are our favorite dish for winter, whether it’s for lunch or dinner. They are simple, delicious and satisfying.

Parsnip, sage and white bean soup

Have you seen our Instagram? We posted about Jamie Oliver parsnip, sage and white bean soup. It’s one of our favorites.

Ingredients

  • 1 onion
  • 2 large parsnips
  • 1 x 420 g tin of cannellini beans
  • 1 sprig of fresh sage
  • olive oil
  • 1 fresh bay leaf
  • 1 organic litre chicken stock
  • CRISPY PARSNIPS
  • 1 parsnip
  • 2 sprigs of fresh sage
Creamy cauliflower and rice soup

Another one we often do is this one Bliffulbasil. It is made with cauliflower and rice, very creamy, savoury and filling. Try it.

Ingredients

  • 1 cup uncooked wild rice blend
  • 4 cups fresh cauliflower florets
  • 2 tablespoons olive oil
  • 1 large white or yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, peeled and diced
  • 1/2 teaspoon dried thyme or rosemary more to taste
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 1/2 cups filtered water
  • 2/3 cup raw cashews, soaked for two hours (unless using a high-speed blender)
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons sea salt, plus more to taste
  • Freshly ground black pepper, to taste
Gorgeous Pumpkin and lentil soup

The last one that we absolutely love is from our Nutrition course with Jo Travers. A tip is that you can also use this same exact recipe with another main vegetable such as carrot or squash.

Ingredients

  • 1 tbsp olive oil, plus 1 tsp
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • approx 800g chopped pumpkin flesh, plus the seeds
  • 100g split red lentils
  • ½ small pack thyme, leaves picked, plus extra to serve
  • 1l hot vegetable stock
  • pinch of salt and sugar
  • 50g half-fat crème fraîche
