We love chicory! Yellow, white or red, they are different varieties and their taste vary slightly. They are so delicious, and they can be eaten raw or cooked. They are a very good source of Fiber, Vitamin, Iron, Magnesium. Here are three of our favourite recipes:

Roquefort salad with pears, chicory and walnut oil

This one is very easy and quick to make. Including strong cheese, soft fruit and some nut. It’s an original mix of flavours which go perfectly with the chicory. From BBC.com link here.

Vegetarian chicory gratin

This recipe is cooked but it can be eaten hot or cold. The chicory becomes tender, and its flavour differs from when it’s raw. Try it, it’s spectacular. From Olive magazine link here.

Sauteed chicory

This is to be eaten as a hot dish only, and probably best as a side dish. Unless you’re a big fan of chicory. It’s a great alternative to traditional side dishes. From An Italian in my kitchen link here.
